Instructions
  1. Peel, wash and grate the celeriac. (if you have a grater attachment for your food processor this is the perfect opportunity to use it!)
  2. Mix all the ingredients together in a large bowl. And that's a wrap!
  3. Note: For those of you who are unaware a lot of vinegar is actually pasteurised and filtered which unfortunately kills all the good bacteria inside it. Raw or unpasteurised vinegar will have bits floating in it. Please don't be put off by this as the vinegar will contain many healing properties in this form. The bacteria that turns an alcoholic liquid to vinegar is often called the mother.
Recipe Notes

This salad is amazing eaten fresh when it is  super crunchy but it is just as good a week later once all the flavours have intensified and the celeriac has softened slightly.

I would suggest if you are making it ahead of time leave half of the dill out till serving or add extra just before you serve to keep the lovely green colour.

To make this dish fully raw just blend avocado with some raw plant milk to make a dressing.

This is a delicious salad on its own or as an accompaniment with your favourite Quiche, Frittata or Meat alternative.
