Raw Greeen Apple Cake

This was my first ever attempt at creating a raw cake recipe. It went down very well at the café and I have gone on to create a few more that have been equally successful. I would like to share this recipe with you. I hope you enjoy making and eating it as much as I enjoyed creating it. Enjoy 🙂

I believe some people like to soak raw nuts to rid them of toxins, activate the enzymes and make them more easy for the body to digest. For this recipe I would soak, rinse and then slightly dehydrating them again to achieve the same texture.

Ingredients

Lemon Cashew frosting

  1. Combine all ingredients in a food processor till everything is approximately the same size and press into a lined cake tin
Lemon Cashew Frosting
  1. Blend all ingredients in a high powered blender or alternatively soak the nuts for 6-12 hours for a smoother icing in less powerful blender. You will have to add slightly less water if soaking the nuts
  2. Spread on top of the cake base in the tin and allow to set for a minimum of 6 hours in the fridge or 3 in the freezer
