Yes you read that right!!! Now I know I am starting up a business that is refined sugar free and I am supposed to be cutting it out of my diet too but sometimes you just need a delectable treat after a lot of hard work! Well that is my excuse anyway and I am sticking to it!
Instructions
- Melt the vego in a bain marie (a bowl over a pot of hot water)
- Add all the ingredients into a high powered food blender and wiz till light and fluffy. That's it. It is that simple!
- You can serve this anyway you like really. In a biscuit shell & make a cheesecake. In a heatproof dish & Brulee the top. I put it into a piping bag with a star nozzle & layered it with frozen mixed berries & pumpkin seeds. Once the berries thaw they release their juice and make a berry sauce layer too 🙂 The possibilities are endless!
- You can eat it straight away but it will be slightly runny. Refrigerate for a few hours for it to firm up completely. For a cheesecake version I would chill for a minimum of 6 hours.
