  1. Melt the vego in a bain marie (a bowl over a pot of hot water)
  2. Add all the ingredients into a high powered food blender and wiz till light and fluffy. That’s it. It is that simple!
  3. You can serve this anyway you like really. In a biscuit shell & make a cheesecake. In a heatproof dish & Brulee the top. I put it into a piping bag with a star nozzle & layered it with frozen mixed berries & pumpkin seeds. Once the berries thaw they release their juice and make a berry sauce layer too 🙂 The possibilities are endless!
  4. You can eat it straight away but it will be slightly runny. Refrigerate for a few hours for it to firm up completely. For a cheesecake version I would chill for a minimum of 6 hours.

You just have to give this a go! you could make it with your favourite unrefined sugar chocolate too.
